I hate waitstaff. As far as I am concerned they are merely the carrier of my work to the intended recipient, and even then they still can't get it right! Waitstaff are the necessary evil I must put up with to fulfill my duties as a Chef, and I hate them just a little bit more than I hate the customers they serve, but I'll keep that for another blog!




I have worked my arse off to become a chef. I have travelled around the world, worked in many different countries and some of the best hotels and restaurants they have to offer. I have been cut and stitched, burned, bashed and broken, physically and mentally. I have had to learn two different languages, French and German. I have to understand mathematics, computers, menu composition, people management and, I still have to be a good cook. It seems to me that the only qualifications needed for a waiter these days is a heartbeat, and even then I find myself searching for that in them too.

They stroll into work at 5 or 6pm, on the dot, with no time to brief themselves of Chef's Specials, table plans, section allocations, and bang, curtain goes up! They are still pulling their pants up when the guests start to arrive, and the chaos begins. I find myself asking the Exec, "What the fuck's going on tonight, who's doing what?" "Fuck knows!" is his reply! :) It's a comedy show to us, and I really do find it amusing, I laugh out loud on a regular basis. It also amuses me to annoy these waiters, just to add to their mounting stress levels, then stand back and watch the show unfold. They're all out there now, panicing, stressing, taking orders for food and drinks. The kitchen suddenly goes from standstill to totally overwhelmed in 30 minutes. There's just not enough oven space, all gasses are full and there's simply not enough bodies in the kitchen to cope with all the orders coming at once. Then we cop the abuse, "How long for table 15?" "Table 3 are getting shitty." "The guy on 6 reckons he could cook better gratin himself!" FUCK OFF! We're working at top speed, as fast and as good as we can, give us a fucking break hey!

I've also been abused by waiters during service, which is like pulling the pin on a grenade, the shit's going to go flying! Years ago in Germany, I had a waiter try to stab me, until he was knocked out by the commis chef!

Why does this happen? Not one of these waiters has any skill in the profession, because that is what it is, a professional job, not a part time money making thing. If it's just for the extra cash, please, go somewhere else to earn it, supermarket checkouts always need staff.

When I was an apprentice, waiters were just like us. They were full time, working the same hours as the chefs, and often more. They had to learn the trade from the ground up, become qualified, and work their way through the ranks to get to the top. They had titles, Aboyeur, Maitre de Hotel, Commis debrasseur, Sommelier and Chef de Rang, to name just a few.

During service time it was a planned and carefully executed show that the guest was unaware of. These professionals had the ability to quote you the menu and take your order without looking at a menu or having a pen and order book, and they could personalise the service and make every table feel like they were the only one in the restaurant.

When they came to the kitchen to pick up food, they were carefully and quietly directed to stand in queue and wait for their table to come up. We were under no circumstances allowed to interact with the waiters, and that is how it was, quiet, organised and working well, with waiters taking their food to their table at the right time. I should mention that waiters were paid even less than chefs, they had to make up their earnings with tips, which could be very rewarding to a great waiter. No tips were shared in the kitchen then, and rightly so.

So what the fuck has happened? No kid is going to want to leave school and earn shit money for years doing shit jobs, just to maybe one day work in a world class restaurant as a chef or a waiter. It's a dying industry I find myself in, and I'm trying to maintain the standards that took so long to learn. So why should I have to put up with waitress cryalot or waiter dumb ass, who does 2 0r 3 hours a night, who wrecks my food when they yank it off the pass, who takes the wrong food to the wrong table or mixes up the well done and medium rare steak, who cant write a legible order, or who won't answer me when I speak? These fucking idiots are spoiling the night for the guest and they are ruining everything I've worked for and making me look incompetent as a chef. They reason the guest has been waiting an hour for their mains is because waiter dumb ass took their food to the wrong table 30 minutes ago and hasn't realised it yet.
Fucking waiters! Seriously, the only reason I put up with them is because it keeps me away from the customer!

I so agree with you. I think it is really sad that the industry has gone so pear-shaped over the last ten years or so.

I also believe this has much to do in the ways in which restaurant staff are paid - or the lack of. If the remuneration was as good as in other service industries, then maybe people would treat it more like a profession and not some "easy way" to pay their way through Uni or Tafe.

Good on you for speaking up! It's about time these things are being voiced in the open.

lmfao i dont think I have ever laughed so hard in my life!! your right you know ... this job for so many waiters is just a means to an end (or for a bit of extra cash). So while you are sitting up there in your "Im a wicked chef god.... bow to me" role day in day out, I think it dawns upon almost every "serious" staff member that has chosen the hospitality industry as a career (and I don’t use the word career lightly: I am talking about the ones that are there from dusk till dawn and use that particular job as their only source of passion and income) the waiter/waitress gets to leave at the end of service forget about the shit or good night that has just unfolded and go on living their lives. Because seriously, outside the hours of 5-6pm to 1am there are far more important things in life lol. So sure waiters and waitress’s don’t give a toss about carting the well put together artwork of some prick that has decided to hate them because the role the waitperson has taken on is not that role in which he or she has experienced in past years at worldly 5 star establishments. LOL it never fails to amaze me just how high a “high-horse” can get.

However on the other hand I am in the upmost agreement to almost everything within that blog and perhaps a person that dose not take the industries role as serious as some should not post as freely, but its not within my nature to cop it sweet. I think that if things were to change within your workplace a leadership role should be taken a little more ‘hardout’ with your head waitperson because it sounds to me like there is a major rift somewhere between the wait staff and chefs (I could be wrong) Sure its easy to fly off the rails and vent about a particular group but to not offer any solution (maybe because there may not be one) is ignorant. Wait staff may be shit in your eyes but they are your face, eyes and ears out on the floor and to hate them for sake of it is really a cluster fuck that only you can work on.

For all the shit kicker wait staff out there that are keeping on keeping on. A simple reminder, that’s its only a job and a job can be replaced, your dignity however should not be taken from any arrogant dick just too make him or herself feel just that little bit better, that the career they have chosen may not always be the one they wanted day in day out or purely for an ego trip.

You know what your right. Half the weighters these days are just there for the cash, dont really work on drive or passion....whats happend to the seriously interested weighter...........

I think this post is a crock of absolute shit! how can you possibly put all of us in the same boat. To you we may just be your little "carriers" but some of us actually put our heart and soul into the front of house so the customers have a pleasant night out.
People do not just come to a restaurant for the great tasting food, they come for the whole dining experience.
Tell me, how many people would go back to the same restaurant if us waiters were unpleasant even if the meals were superb?
Or how many people would call a good night out going up to the pass and collecting their own meals? Very very minimal.

Yes some waiters are just doing it for the extra cash but others like myself actually love this profession and will not settle for anything less than a high quality standard.

Have you thought that the way we are treated by chefs that think they are better than everyone else causes us to not care or have a lack of motivation? Having our energy sapped from us by trying to avoid conflict or to keep you happy is not fun!

I hope you treat your waitstaff with more respect than it sounds. we are human and everyone deserves a fair go and respect.

@ 1st Anonymous comment. It always pays to do a little homework before putting your opinions forward. Read the posts on this site carefully, and you will learn that I love my job and i have learned to accept that it is the way it is, and life for me now as a Chef is different. You will also see a post from Ranting Chef about one of our waiters who most definately has balls and can work well under pressure.
I choose to work where I am, I offer my services there, and if my current employment bothered me that much, I'd give myself a good fucking boot up the arse and move on and stop whinging.
What I'm talking about in this posts is the extremes of he industry. My high horse is a fucking giant, but a good chef is one who knows how to dismount, lol!
Like I said, it's a dying industry and there's really not much we can do about it.
For all the shit kicking waitstaff out there, who are just doing it for the money, and who take offence to this post, you are exactly the ones I'm talking about. It is just a job to you and it can be replaced, so please do so.
I have worked with many good wait staff, past and present, and it's an absolute joy to have done so. You know who you are.

well i for one am a chef and i think totally the opposite to those in question where you need treat your waitstaff with a little respect and gratitude that they actually come to work and put up with some of the shit they do. not only the unrulely guests but the dumb shit chefs who think that cause they have worked all over the world that they now everything and now better then everyone else and rant and rave to there waitstaff to try and have some sort of power trip over the other staff. in the end we chefs need what little help we can get from the waitstaff to run the business sucessfully.

What makes you think you can say "we chefs"? Don't include me in your chef group, I'm a different class to you and all your scum bag co-chefs. I can rant and rave all I like, because I'm a world class chef, and I DO know better than you, you fucking dipshit, (Did you mean 'know' instead of 'now'). Don't tell me about respect, get some for yourself first, I have the greatest respect for professionals within this industry, Chefs and Waiters alike, and both sides will experience my wrath when they can't do the job. I take no prisoners on my power trip through the world, because I am an Almighty Chef God and I am always correct!! I bet Mummy still washes and irons your whites, fucknut!
